Curried Chickpea Salad Sandwiches



1 14 oz. (398 g) can of chickpeas, drained 3 green onions, thinly sliced ½ cup red bell pepper, finely diced ¼ cup cilantro leaves, finely chopped 3 tbsp mayonnaise

1 clove garlic, minced

½ tsp fresh ginger, grated ½ tsp turmeric ¼ tsp curry powder 1 ½ tsp fresh lemon juice ¼ tsp fine sea salt OPTIONAL: ground black pepper and cayenne pepper (to add heat) TO SERVE: bread, sprouts, sliced tomato, cucumber, any other veggies of choice


1. In a large bowl, mash the chickpeas until flaked.

2. Stir in green onions, bell peppers, cilantro, mayonnaise, garlic, ginger, turmeric and curry powder.

3. Add lemon juice, salt and black pepper to taste. Add in cayenne pepper for some added heat.

4. Assemble sandwich with sprouts, sliced tomato, cucumber and any desired toppings. Mix it up and make it your own!
