Dinner School Coconut Tart

You might be wondering how a Coconut Tart recipe made it into a Celtic publicatio­n. Well, this is my fondest memory of the school dinner hall (I was always a big fan of school lunches.) I went to a huge Scottish high school, and lunch times were quite chaotic. I remember being amazed at how quickly all the pupils got through - it was like a military operation! The smell of “Dinner School” remains with me today. I love coconut, and this recipe is a variation on a coconut sponge. I have been using this recipe for over 25 years. It is easy and quick to make, so give it a go…I am sure that the family will ask for it time and again.
