Inspired by the changing weather and clear skies, this week we feature the Blue Heaven: a mix of light rum, sweet orange, citrus lime, nutty almond and fruity pineapple.

It’s a refreshing cocktail with a cool blue look. Cheers to warmer weather and blue skies.

BLUE H EAVEN

Ingredient­s

2 oz. white rum 1 oz. Bols blue liqueur ¼ oz. Bols amaretto liqueur 4 oz. pineapple juice ½ oz. fresh lime juice 2 pineapple leaves to garnish

Method

Pour all ingredient­s into a shaker filled with ice. Shake vigorously and strain into a tall glass with ice. Garnish with pineapple leaves. Tips

This cocktail is all about a balance of flavours. The liqueurs and pineapple juice add sweetness while the lime juice balances with sourness. If you prefer your cocktail slightly more sour, increase the amount of fresh lime and decrease the pineapple juice.

April is the beginning of pineapple season, so you should find they have most flavour from now into May. I look for a pineapple with yellow-gold skin. Also make sure it’s not gummy, soft or leaking. This indicates it is overripe.
