QUICK CHICKPEA SA LAD
Serves: 6
1 can (19 oz/540 mL) chick
peas, rinsed and drained 1 cup (250 mL) halved
grape tomatoes
1/2 cup (125 mL) diced red
bell pepper
1/2 cup (125 mL) chopped
celery
1/3 cup (80 mL) chopped
red onion
2 tbsp (30 mL) chopped
fresh parsley
1/4 tsp (1 mL) freshly
ground pepper
1 jar (6 oz/170 mL) mari
nated artichoke hearts
1. Combine all ingredients except artichokes in a bowl. Drain artichokes, reserving marinade.
2. Cut artichokes into quarters. Add artichokes and reserved marinade to chickpea mixture; toss to combine.
