11/ 2 oz. (44.5 mL) gin 3/4 oz. (22 mL) fresh­squeezed lemon juice 3/4 oz. (22 mL) wa­ter­melon and star-anise syrup 5 pink pep­per­corns 2 sprigs cilantro 1 thin slice fresh wa­ter­melon 11/ 2oz. (44.5 mL) tonic wa­ter

Mud­dle the pep­per­corns in a shaker tin and then add the gin, syrup, lemon juice and a sprig of cilantro. Shake for 10 sec­onds. Dou­ble strain over ice into a high­ball glass. Top with tonic wa­ter. Gar­nish with a cilantro sprig and a wa­ter­melon slice.
