11/ 2 oz. (44.5 mL) gin 3/4 oz. (22 mL) freshsquee­zed lemon juice 3/4 oz. (22 mL) watermelon and star-anise syrup 5 pink peppercorn­s 2 sprigs cilantro 1 thin slice fresh watermelon 11/ 2oz. (44.5 mL) tonic water

Muddle the peppercorn­s in a shaker tin and then add the gin, syrup, lemon juice and a sprig of cilantro. Shake for 10 seconds. Double strain over ice into a highball glass. Top with tonic water. Garnish with a cilantro sprig and a watermelon slice.
