Cider was popular among early settlers in Canada, but it lost ground to beer, then went through a dark age of mass production in the 1970s. Thankfully, cider is back, and Clos Saragnat in Frelighsburg, Quebec, makes some of my favourites – they use indigenous apple varieties that are packed with flavour.
