DAVID HAWKSWORTH ON HIS FAVOURITE FESTIVE CANAPÉ

The holidays are a time to get decadent in the kitchen. One of my favourite ways to kick off a December evening is burrata toast served with peperonata, capers, anchovies and sherry. The cheese’s soft, creamy texture plays off the crunchy toast, while the other ingredient­s mix salty, sweet and a smidge of seasonal colour. As Air Canada’s Culinary Partner, David Hawksworth, chef/owner of Vancouver’s Hawksworth and Nightingal­e restaurant­s, has created dishes exclusivel­y for Air Canada passengers in Signature Class and Maple Leaf Lounges.
