The mix of sweet, savoury and smoky flavours in typical sugar shack fare can make life tough for wine, but beer can hold its own. I like a pale ale – the bitterness cleanses the palate – or a dark Scotch ale, with malt and caramel accents, to buffer those strong flavours.

As Air Canada’s Sommelier, Véronique Rivest, owner of Soif wine bar in Gatineau, Quebec, has selected wines from across the world exclusivel­y for Air Canada Signature Class.
