Cheese and whisky can pair beautifull­y, especially when the whisky is involved in a cocktail with a slightly sweet character that will resonate with the saltiness of the cheese. We recommend a selection of three cheeses—a nippy old cheddar, a rich caveaged Gruyère and a blue from Quebec such as Bleu d’Elizabeth or Bleu Bénédictin. This smooth Manhattan provides the sweetness to the course, but you can also garnish the cheese board with our delicious Dried Cherry Marmalade and slices of fresh apple or pear. The oaky notes in Jim Beam Double Oak add wonderful depth and complexity to the drink. In a cocktail shaker filled with ice, add 1¼ oz Jim Beam Double Oak, ½ oz tawny port, ¼ oz sweet red vermouth and a dash of Angostura bitters. Stir until well chilled and strain into a cocktail glass. Garnish with a Marinated Cherry (recipe on page 153).
