Savoy salmon with caper butter, bok choy & peas

A crisp and slightly watery cabbage, bok choy has more in common with spinach and chard than most of the other cruciferou­s vegetables. Its tender stems and tops lend themselves to stir-fries and Asian flavours. With a history rooted in England and Holland, Savoy is also known as the king of cabbages. Its mild flavour and crinkly leaves are well suited to salads, soups and stews.
