Napa & green cab­bage rolls

Sweet and soft and slightly frilly, ob­long napa cab­bage is no odd­ball. Orig­i­nat­ing in China, it’s ten­der enough to be eaten raw in sal­ads, and is of­ten found in dumplings, soups and hello kim­chi! Green cab­bage is the type most com­monly used; it has deep, dense leaves that are great for wrap­ping things like cab­bage rolls or for shred­ding into slaw.
