IT’S FINALLY GRILL SEASON TIME TO TURN UP THE HEAT WASABI SHIITAKE PORK BURGERS

Yield: 6 burgers Prep: 20 minutes Cook time: 20 minutes

Ingredient­s

2 pounds ground Ontario pork 1/4 cup Thai sweet chili sauce 100 grams shiitake mushrooms 150 grams enoki mushrooms 1 tsp. Chinese five-spice blend 2 tsp. oil (avocado or olive) 1/2 cup mayonnaise Wasabi paste (to taste) Pea shoots ( or garnish) 6 burger buns

Cooking instructio­ns Burgers:

1. Mix ground Ontario pork with Thai chili sauce and form into 6 burgers. 2. Heat grill to medium. Place patties, sear, flip and remove once internal temperatur­e reaches 160 F / 71 C.

Mushrooms:

1. Shiitake: remove stalks, thinly slice tops. 2. Enoki: trim off the bottom of the stalk and separate the heads into pieces. 3. While burgers are cooking, heat oil. Once hot, add the Chinese five-spice blend and mix. 4. Add shiitake mushroom slices and sauté or 4-5 minutes. 5. Add enoki mushrooms and cook an additional 1-2 minutes. Remove rom heat and set aside.

Mayo:

1. Place mayonnaise in a bowl and add wasabi to taste. Mix.

Assemble:

1. Place each burger on toasted bun. 2. Slather with some wasabi mayo. 3. Top with mushrooms and garnish with pea shoots.
