This duo of Wolf Blass Chardon­nay and Shi­raz helps you con­duct the ex­per­i­ment. Both are rich, tangy, char­ac­ter­ful wines with lots of fruit and oaky spice, the white show­ing stone fruit and melon aro­mas, the red full of plums and black pep­per. For me, the bomba sauce on the sand­wich (recipes on pages 218 & 219) gives Shi­raz the ad­van­tage—but you be the judge.
