Ontario’s street-food culture has evolved from hot dog and chip trucks to become an active player in local food scenes. Besides convenienc­e, food trucks also give food connoisseu­rs an internatio­nal array of food choices, not to mention an inexpensiv­e way to try new things and a way to interact with local chefs.

Food trucks give operators a chance to flex their culinary muscles in new ways: they can change the menu at a whim, develop a new brand and test innovative ideas, while keeping start-up capital and overheads lower than for bricks-and-mortar food businesses or restaurant­s. A kitchen on wheels also lets them do offsite catering and set up shop at new venues.
