The perfect summer wine, rosé is so food-friendly that we’ve designed a menu with a different bottle and style for each course, from appetizer through to dessert— just to prove the point!

Even if you can’t make it to Ibiza this summer you can still recreate its laid-back vibe with this simple menu. It’s inspired by the Spanish island’s abundance of fresh ingredient­s, and the most versatile of summer wines— rosé. A glass of fresh and vibrant rosé immediatel­y puts you in a Mediterran­ean frame of mind, and the accompanyi­ng dishes are perfect for enjoying al fresco in the warmth of the summer sun. Some of the delights that grow around the Ibizan countrysid­e are fresh figs, persimmons, olives, pomegranat­es, oranges, lemons and wild fennel, a lot of which have inspired the roséfriend­ly dishes that follow.
