Seafood

From Amy Mumby and Adam Delorme in Prince Edward County, this superb seasoning starts with a base of smoked Sicilian sea salt. Dried lime zest, fennel seed and dill are added to make it the perfect flavour enhancer for seafood, not to mention potatoes.

Beef

From one of Canada’s oldest restaurant­s, Barberian’s steak spice has had a cult following since 1959. Rubbed into steaks, it gives the beef a savoury hit of garlic and onion plus a little heat from black pepper. You can use it throughout the year in meatloaf, brisket and even as a rim for Caesars.

Ted Reader’s gently spicy barbecue rub is made from a blend of 13 herbs and spices.
