Monday ZA’ATAR-SPICED LENTIL SOUP Recipe on page 216
Za’atar sounds exotic, but if you’ve eaten any
Middle Eastern food, you’ve probably tried it before. While its seasonings may vary, za’atar is usually made up of dried oregano leaves, marjoram and thyme, as well as ground cumin, coriander, sumac and sesame seeds. Stored in an airtight jar in a cool spot, the mixture will last up to a year. Sprinkle it on chicken or vegetables before roasting. Try it sprinkled over hummus, or brush pita with oil then sprinkle with za’atar, and heat.
what to serve
Aromatic spices and earth tones find a great match in a fruity red wine.
