We tested a variety of stouts for this recipe, and you can certainly use whatever you have on hand, but our favourite was Henderson Export Stout

(LCBO 13445, 473 mL, $3.80). This award-winning beer has notes of chocolate and coffee that add depth and richness to the cake while pairing beautifull­y with the ginger and candied peel.
