If those tasty browned bits on the bottom of the roasting pan start to burn while you’re roasting turkey or beef, pour in 1/2 cup (125 mL) water or broth. Those browned bits can elevate a gravy from good to great.

Stirring in some finely chopped fresh herbs at the end of making a gravy adds not only flavour but colour too. Likewise, a small dollop of mustard in a beef or pork gravy will boost the taste and texture.
