You bought a big tub of tahini to make hummus, and the rest has been languishin­g in the fridge for months. Have no fear: the sesame paste is an extremely versatile ingredient. One of the best uses is in tahini sauce. Simply thin it out with water, season with salt, and add a generous squeeze of lemon. The sauce is excellent on fish, grilled eggplant and sliced tomatoes. For breakfast, try spreading tahini onto toast with honey, cinnamon and coarse sea salt. And if you want to get rid of it all in one fell swoop, try making halvah, the beloved fudge of the Middle East.
