SMØRREBRØD WITH GRAVLAX , RADISH & DILL

— Danish food, in particular, is among the best in the Scandinavi­an region. Copenhagen has quickly become a world capital of gastronomy with the Noma among others, and one of its main attraction­s is known as smørrebrød: “bread and butter,” or the open sandwich. Here are our versions.

FOR 1 PERSON Ingredient­s for both slices:

• 3 slices of salmon gravlax (recipe on page XX)

• Cow's Creamery Butter (you can replace with

• a plain yogurt)

• 1 slice of pumpernick­el bread from Automne Boulangeri­e

• 1 radish sliced finely on the mandolin

• Crumbled Sea Bacon from Océans de saveurs

Recipe preparatio­n :

Salmon gravlax, dill and radish

• Butter well the slice of bread

• Place 3 slices of gravlax rolled on the slice of bread

• Place the radish slices on the slice of bread • Season with sea bacon

• Decorate with dill
