Un petit château construit en 1878 par George Merrill, le premier magistrat du comté, est aujourd’hui un charmant hôtel de luxe où se fabriquent de nombreux souvenirs. Apprenez-en plus dans notre entretien avec le propriétaire, Jordan Martin de Rosales.
To continue this trip in the Prince Edward County in Ontario, I must speak to you about where I stay, thanks to Cadillac Canada, the Merrill House. A little castle built in 1878 by George Merrill, the first magistrate of the County, is now a luxury boutique hotel where many memories are made. Learn more in our interview with the owner, Jordan Martin de Rosales.
Vous vous demandez peut-être comment un projet comme celui-ci démarre. Eh bien, il y a une histoire fascinante derrière cela. «C’était une ambition depuis longtemps. L’industrie hôtelière m’a toujours passionné, et au fur et à mesure que mes études se développaient, je me suis davantage intéressé, en particulier au segment du luxe. J’ai donc déménagé du comté de Hastings à Londres (Royaume-uni) pour faire ma maîtrise en gestion de marques de luxe. Et après cela, j’ai oeuvré pour de nombreux photographes de renom à travers le monde. Ensuite, la vie de l’hospitalité m’a eu. J’ai travaillé pour le groupe Grange Hotel à Londres et le groupe Jumeirah à Dubaï. Et finalement, j’ai lancé mon agence de gestion de marque», raconte M. Martin de Rosales.
Vous vous demandez peut-être comment est arrivée la Merrill House que nous avons aujourd’hui. Pendant son temps à Londres, M. Martin de Rosales s’intéresse de plus en plus à avoir son hôtel. Puis, un jour, à son domicile londonien, à Pâques alors qu’il travaillait sur un projet, une révélation lui vint : «Ce n’est pas ma passion. Ce n’est pas ce que je veux faire finalement. Et la même semaine, je suis allé voir un petit château dans le nord de l’angleterre transformé en 13 chambres et suites», ajoute le propriétaire de Merrill House.
Cela ne s’est pas produit du jour au lendemain, comme vous pouvez vous le constater. L’idée de départ de M. Martin de Rosales était de garder sa résidence à Londres et de faire l’acquisition d’un domaine dans la campagne anglaise. Mais, en tant qu’amateur de vin, il voulait aussi quelque chose dans un territoire viticole. Il s’est alors dit qu’il pourrait alors peut-être avoir quelque chose en Bourgogne et posséder un pied à terre à Paris. Puis, il est revenu au Canada pour Noël. C’était il y a trois ans. Pendant qu’il était chez sa famille pour les vacances, il a entendu parler de tout ce qui se passait dans le comté de Prince Edward, et de sa transformation rapide en une région viticole prospère. Subséquemment, il a trouvé ce qui s’appelait Merrill Inn, à l’époque, en ligne. Il a dû retourner à Londres, mais ensuite ses parents sont allés visiter la propriété, par la suite ce fut le tour du jeune entrepreneur. Alors il est revenu, et le reste appartient à l’histoire.
La première année, c’était à l’été 2018. «L’hôtel était complet pour la belle saison. Nous avons par conséquent géré la première année comme les précédents propriétaires. C’était un concept d’auberge de campagne que nous avons rénové l’année suivante pour lancer la saison 2019. Cela ne fait donc même pas un an. Voilà un peu l’histoire», explique l’hôtelier.
You may wonder how a project like this starts. Well, there’s an interesting story behind it. “It was an ambition for a long time. I was always really passionate about the hotel industry and getting into the hospitality business for most of my life, and as my education developed, I became more interested, especially in the luxury segment. So I moved to London (UK) from Hastings County to do my master’s in luxury brand management. After getting my diploma, I worked for many renowned global photographers. Then the hospitality life got me. I worked for the Grange Hotel Group in London and the Jumeirah group in Dubai. And ultimately started my brand management agency,” relate Mr. Martin de Rosales.
You may wonder how it came to the Merrill House that we have today? During that time in London, Mr. Martin de Rosales gets more and more interested in having his hotel. Then, one day, at his London home, during Easter as he was working on a project, a revelation came: “This isn’t my passion. This isn’t what I want to be doing ultimately. And the same week I went to view a little castle in the north of England that had been converted into 13 rooms and suite” adding the Merrill House owner.
It didn’t happen overnight, as you may wonder. The original idea was that Mr. Martin de Rosales stayed in London, and have a property in the English countryside. But, as a wine lover, he also wanted something in a winery region, so he thought then maybe he could have something in Burgundy and have a place in Paris. Then, he came back to Canada for Christmas. That was three years ago. While at his parents for the holidays, he heard about everything that was happening in Prince Edward County, how it was emerging as a wine region, how quickly it was growing. Subsequently, he found what was called Merrill Inn, at the time, online. He had to go back to London, but then his parents went to view the property then, it was the young entrepreneur time. So he flew back, and the rest is history.
The first year was in the summer of 2018. “The hotel was fully booked for the summer. So we ran it through the first season as it was before. It was like a country Inn concept that we renovated last year to launch in summer 2019. So it’s not even a year yet. Which makes sort of the journey,” told the hotelier.
Un Restaurant Wine Spectator Awards
La priorité pour le propriétaire était de bâtir le restaurant, il a donc embauché un directeur des vins à temps plein pour commencer à construire la cave dès la première semaine. Et depuis, ils ont remporté deux prix Wine Spectator (dont un troisième en 2021). Ils sont les seuls lauréats des Wine Spectator Awards entre Toronto et Ottawa, et comme un seul est présent dans la capitale du pays, ça fait uniquement deux endroits entre Toronto et Montréal. «Le programme de vin était vital pour moi. Nous retrouvons de nombreux établissements vinicoles locaux du comté de Prince Edward. Et puis notre liste complète de produits du vieux monde aussi. Nous avons maintenant près de 300 vins. Les trois segments principaux sont d’abord l’hôtel, en second lieu la cave et ensuite la nourriture», a ajouté M. Martin. Nous avons une dizaine de champagnes sur la carte avec Bollinger, Dom Perignon, Cristal (de Roederer), Veuve Clicquot, Ruinart, etc. Nous avons aussi notre champagne maison; ça s’appelle Bernard Depoivre, qui, je pense, est uniquement dans un second restaurant au Canada, mais c’est une excellente connexion locale. Les galeristes de la Maison Depoivre, chez qui j’achète mon art local, sont français, l’un bourguignon et l’autre champenois. La famille de ce dernier possède une maison de Champagne, Bernard Depoivre. C’est donc comme un vrai champagne local, ce qui est un lien passionnant.
L’ambiance
Je demande à M. Martin de Rosales de quelle façon son influence se transcende dans la Merrill House; la première chose qu’il dit : «Souvent en Amérique du Nord avec une résidence comme celle-ci, les gens ont une ou deux approches. C’est soit de créer un pastiche du passé, où tout doit être conservé selon la période, soit entièrement moderne. Je veux dire, cet espace est totalement actuel. Pour ma part, je voulais faire la même chose que les maisons de campagne européennes, où elles grandissent organiquement de génération en génération et de nouvelles pièces s’ajoutent à la collection contemporaine de l’époque. Mais en accord avec le style qu’on a et en respectant l’héritage et en le rafraîchissant. Des accessoires du monde entier et de toutes époques peuvent cohabiter dans une harmonie esthétique. Ils n’ont pas besoin d’être des fragments français du XVIIIE siècle ou quelque chose qui ressemble à ça», précise le propriétaire de Merrill House.
A Wine Spectator Awards Restaurant
The priority was to build the restaurant, so he hired a full-time wine director to start building up the cellar within the first week. And since then, they have won two Wine Spectator awards (with a third in 2021). They’re the only Wine Spectator Awards winner between Toronto and Ottawa, and as there is only one in the country’s capital, making just two between Toronto and Montréal. “The wine program was vital to me. There are many local Prince Edward County wineries and then our full Old World wine list as well. We have nearly 300 wines now. The three main segments are first the hotel, but then the cellar, and then the food,” added Mr. Martin. We have a champagne list of about ten products with Bollinger, Dom Perignon, Cristal (de Roederer), Veuve Clicquot, Ruinart, etc. We also have our house champagne; it’s called Bernard Depoivre, which, I think, one other restaurant in Canada has, but it’s a great local connection. The gallerists at Maison Depoivre, which I’m buying my local art through, are from France, one of them is from Burgundy, and the other is from Champagne. The family of the latter has a Champagne house, Bernard Depoivre. So it’s like a local Real Champagne, which is an exciting connection.
The Ambiance
I ask Mr. Martin de Rosales how his influence transcends in the Merrill House; the first thing he said: “Often in North America with a house like this, the people took one or two approaches. It’s either creates a pastiche of the past, where everything should be kept with the period, or entirely modern. I mean, this space is entirely modern. For me, it was about to do the same as European country houses, where they organically grow generation after generation and new pieces are added to the collection contemporary to the time. But in keeping with the style that has and respecting the heritage and modernizing it and that. Pieces from all over the world and all different periods can live together in aesthetic harmony. They don’t need to be 18th-century French pieces or something that resembles that” precise the Merrill House owner.
Quant à la décoration, l’hôtelier d’origine ontarienne m’a dit qu’il avait expédié d’angleterre plusieurs de ses propres tableaux, des objets d’art et des meubles de choix. Dans cette année de rénovation, il a commencé à acheter beaucoup de meubles, ce qui lui a permis de bien planifier la modernisation.
Nouvelle propriété en route
Comme vous le savez peut-être, nous, entrepreneurs, avons toujours de nombreux projets. C’est aussi le cas de l’hôtelier. Il se concentre sur une nouvelle propriété dans le comté de Prince Edward, à environ 20 minutes de Merrill House. Ils y planteront un vignoble, et il y a également un verger mature, alors peut-être qu’un cidre viendra. Ils auront parallèlement un potager où ils feront pousser leurs produits pour les restaurants. On retrouvera également un club de plage privé pour les invités de Merrill House dans les années à venir. On y trouvera une piscine, un bar et un restaurant pour le lunch, qui permettra subséquemment des pique-niques privés. Ils retardent la deuxième propriété prévue pour 2021, mais nous en avons eu un aperçu avec les propos de M. Martin de Rosales. «Ce sera très moderne avec une structure vitrée d’où l’on voit l’extérieur, une ambiance qui ressemble à ce qu’il y a ici dans la véranda. On n’a pas de maison historique à réparer; l’ensemble du domaine possède un patrimoine fascinant. Et on retrouve environ cinq acres de parc qui ont été plantés au début des années 70».
Je demande alors à M. Martin ce qu’il aime le plus dans la vie d’hôtelier. Il répond en disant qu’elle rassemble tant de passions : le côté vin de la cave, la nourriture avec le restaurant, il a adoré le côté design pour améliorer l’hôtel et rencontrer tant de personnes captivantes qui déambulent par Merrill House. «Près de 50 invités peuvent passer ici chaque jour et, bien sûr, je ne peux pas parler avec tout le monde, mais c’est spécial lorsque les gens s’intéressent à une visite ou veulent en savoir plus sur la maison, alors c’est agréable de se connecter avec eux. Et souvent, nous partageons des antécédents et des intérêts», conclut M. Martin.
La dernière phrase pour résumer la passion de M. Martin de Rosales et la communauté «C’est une chose merveilleuse à propos du comté de Prince Edward, c’est que tant d’entrepreneurs et d’acteurs ici essaient de réaliser leurs rêves.»
As for the decoration, the Ontario-born hotelier told me he shipped many of his owned paintings from England, objects of art and select furniture. In that year of renovation, he started to buy a lot of furniture, which gave him a chance to plan the renovations.
New Property on the Way
As you may know, we, entrepreneurs, always have many projects. It’s also the case of Mr. Martin. He’s focusing on a new property in Prince Edward County, about 20 minutes from the Merrill House, where they will plant a vineyard, and they additionally have a mature orchard there, so maybe a cider will come. They will also have a kitchen garden where they will be growing their products for the restaurants. There’s going to have a private beach club for the Merrill House guests in the years to come. With a pool, a bar and a lunch restaurant, which will also provide for private picnics. They delay the second property for 2021, but we had a glimpse of Mr. Martin de Rosales words. “It will be very modern with a glass structure where you can see outside, an ambiance that resembles what’s down here in the conservatory. There is no historic built house to fix; all of the estate has a fascinating heritage. And there are about five acres of Parkland that was planted in the early seventies”.
I then ask Mr. Martin what he likes the most of the hotelier life. He replies by saying that it brings together so many passions: The wine side of the cellar, the food with the restaurant, he loved the design side of improving the hotel and meeting so many interesting people that come through Merrill House. “Fifty guests can come through here every day and, of course, I don’t get to speak with everyone, but it’s special when people are interested in a tour or in learning more about the house, then it’s nice to connect with them. And often, we share some background and some interests,” concludes Mr. Martin.
The last sentence to resume the passion of Mr. Martin de Rosales and the community “It’s a wonderful thing about Prince Edward County is that so many instrumental, entrepreneurial people out here trying to make their dreams happen.”
