Fresh Wines, Escape Wines

After a spring spent waiting and wondering, we can finally take full advantage of the summer that is offered to us with this beautiful dream temperature. To celebrate, we can think of qualitative, refreshing, digestible and authentic wines ideally not with a not too high content in alcohol. Here are some suggestions to consider that will satisfy your summer thirst and all your senses for your al fresco dinners or the unexpected picnic in the park if not for a reception on the patio!

STUDIO BY MIRAVAL 2020

• 100% Rolle

A tip, serve the bubbles, white and rosé wines fresh but not too cold, as they will lose some aroma and taste. They can be taken out of the refrigerator about 10 minutes before serving them between 6 and 8 degrees ideally, of course according to your tastes. Let’s avoid adding ice as much as possible as the taste will be slightly diluted. As for the reds, put them in the refrigerator for about 30 minutes to serve them between 15 and 18 degrees Celsius as they will heat up fairly quickly in hot air.

TROIS MOINEAUX WISMER LAKEVIEW VINEYARD RIESLING 2019

Clearly a wine to brighten up a picnic or a beautiful moment on the terrace, the fruit of the efforts of 3 passionate Quebecers hence its name. It bursts with green apple, peach, lemon and spices flavours; the acidity is lively and it improves over the sip. In addition, this microclimate is optimal and the clay-limestone soil gives an impression of minerality.

Pairings:

A tomato herb burrata or sushi will be magnified.

Varietal:

• 100% Riesling

FRIULI SAUVIGNON BLANC AND RAMATO SUN GODDESS BY FANTINEL

The result of a collaboration between R&B musician Mary J. Blige and the Fantinel du Frioul wine house is astonishing! Sauvignon Blanc is sparkling and exhibits pear and grapefruit with a grassy side.

Their Ramato Friuli Pinot Grigio Ramato gives the sublime impression of beingbetween a rosé and an orange, it is delicate and floral, off-dry (it seems dry in the mouth thanks to its refreshing acidity). Available at the LCBO and towards August at the SAQ!

Pairings:

White: A perfect wine for an unexpected picnic or an aperitif consisting of cheeses, a burrata or a goat cheese, or even sushi.

Ramato: Its salmon color and notes of peach, melon and strawberry would pair well with seafood pasta, a prosciutto melon dish or a pizza with grilled vegetables.

Varietals:

• 100% Sauvignon blanc for the White

• 100% Pinot Grigio for the Ramato

SABBIE DELL’ETNA BIANCO AND ROSATO

Sicily fascinates not only with its sun and maritime climate but also with Mount Etna which rises to 3323 meters above sea level and gives a volcanic soil, an asset for its wines. Producer Firriato (also known for the red Nari) excels here with his organic wines including the Bianco with notes of orchard fruit (apple, white peach and apricot). It exudes white flowers, a vegetal touch, and a beautiful texture. The taste improves over sips as it oxygenates!

Their Sabbie Dell’etna Rosato is also a memorable rosé with raspberry, tangerine, lime, flowers and a smoky touch! It also improves over time.

Pairings:

Bianco:to enjoy on a plate of asparagus, grilled or in a salad, otherwise on a white fish, herbs and capers.

Rosato:: A treat with even grilled shrimp, a vegetable tempura including sweet potato or a salmon tartare.

Varietals:

Bianco:

• 80% Carricante

• 20% Catarratto

Rosato:

• 100% Nerello Mascelese

INNISKILLIN DISCOVERY SERIES P3 2020

• 58% Pinot noir

• 31% Pinot gris

• 11% Pinot blanc

Santé, et bonnes retrouvailles cet été!
