Situé entre San Francisco et Los Angeles, il profite de l’ensoleillement salutaire. En 2017, Austin — c’est aussi le prénom du propriétaire — a sorti son premier Cabernet-sauvignon et il est immédiatement devenu le porte-drapeau de Robles. La preuve est dans le verre, cette cerise et ce bleuet fascinants, ces tanins veloutés, ces épices douces, ce boisé aux accents de vanille et cette torréfaction, c’est tout simplement divin. Bref, un vin frais, corsé, complexe et d’émotion. Il rehausse à merveille un filet mignon de boeuf ou un magret de canard sauce aux petits fruits. Fabuleux.
