Gluten-free dinner goes March 6

COLLEGE’S CULINARY CAREERS STUDENTS PREPARING SPECIAL MEAL

Allergies to gluten and dairy products are much more on the health radar these days.

It’s with that health issue in mind that the ninth annual Gluten and Dairy-Free Dinner at Lethbridge College will take place Tuesday, March 6.

The family-friendly dinner, which starts at 6 p.m. at the college’s Garden Court Restaurant, is prepared by Chef Stephen Klassen and his Culinary Careers students from the college. The meal is part of the students’ learning about the preparatio­n of gluten-free and dairy-free meals.

The menu for the meal includes: FIRST COURSE • Beetroot & Heirloom Tomato Salad with Blood Orange Mousseline, Mint & Pea Dressing, Candied Hazelnuts & Aerated Squash Curd SECOND COURSE • Chili Spiced Seared Prawns with Cucumber Radish Slaw

• Spicy Chili & Garlic Vinaigrett­e • Mango Salsa MAIN COURSE • Roasted Striploin of Beef

• Sauce Bordelaise & Caper Almond Gremolata

• Fingerling Potatoes & Vegetables DESSERT • Vanilla Yogurt Panna Cotta with Raspberry Jelly with

• Sponge Toffee & Dark Chocolate, Hazelnut & Orange Sphere

The evening will also feature a number of door prizes courtesy of local businesses.

Tickets are $44 for adults and $25 for children (prices include GST and one glass of wine or a soft drink). Tickets are available until noon Thursday, March 1 at Nutter’s Bulk and Natural Foods in Lethbridge or at the college (phone 403-308-5048).
