Water Tower Grill menu highlights local producers
RESTAURANT OPENS TODAY WITH HIGH EXPECTATIONS
Even from the top of the tower, it would be difficult to see something 50 kilometres away.
But maybe you could taste it. Culinary director Shelley Robinson says that 50-km radius will be the source of much of the meat and vegetable selections served at the just-opened Water Tower Grill.
“We want to create a really casual place that’s very focused on highquality food,” says Robinson, corporate chef for the Vintage Group of restaurants in Calgary.
So menu items will feature offerings from such local producers as Broxburn Farms and Benchmark Angus beef, she says. Southern Albertans may taste the difference — starting today.
Renovations are now complete, she says, and staff have been trained to meet Vintage Group standards. Robinson found many Lethbridge chefs who are excited by the opportunity to create original meals instead of restaurant chain fare.
“There are a lot of very fabulous young culinarians here,” she reports.
Now they have a completely renovated kitchen, Robinson says — as well as fresh dining areas to complement their creations.
“There’s a modern, light feel to the room,” Robinson says. “It feels like home.”
There’s plenty of natural light, she adds — as well as the panoramic view.
With its “protein forward” menu and its landmark location, the Water Tower Grill becomes one of eight Vintage Group venues, each with a different focus. Some of the group’s Calgary locations include the Redwater Rustic Grille, the Vintage Chophouse and Tavern, and Moose McGuire’s Beanery and Bar Room.
While each has its own features, Robinson says restaurants must continue to evolve along with their customers’ tastes.
“We’ll continue to tweak the menus as people’s interests change,” she says. “It’s an exciting process.”
