A caesar salad to make you dance
Vegan cookbook has many delights
You know those rectangular clear plastic bins of Earthbound Farm organic greens you find at nearly every grocery store? There are real people behind them: Myra and Drew Goodman who started with a 2 1/2-acre organic raspberry farm and roadside stand in 1984.
Earthbound Farm is now the largest grower of organic produce in North America, probably the world, but the Goodmans still live on their original farm in Carmel Valley, Calif.
And they cook. Myra and daughter Marea have just published a new cookbook, Straight from the Earth. It’s full of fresh, inspiring vegan recipes, but perhaps the most innovative is this salad.
“When I created this caesar salad, I did a silly dance around the kitchen,” says Marea. “Seriously — it is that good.”
