Maury, Vintage 2012, Mas Amiel, France fortified, $20.15 (375 ml), SAQ No. 733808: Just try this with a piece of dark chocolate. The pairing amplifies the fig and dried cassis. Wonderfull­y intense and remarkably unsweet. Gorgeous wine that will age. Serve at 12- to 4C. Drink now-2022. Food pairing: Chocolate, coffee based desserts, digestif.

Maury, Cuvée Spéciale 10 ans d’âge, Mas Amiel, France fortified, $36.50, SAQ No. 11154785: At 10 years, the fruit has calmed, replaced with hazelnuts, spice, a hint of caramel. Delicate, powerful and with exceptiona­l length. Serve at 12 to 14 C. Drink now. Food pairing idea: Chocolate, digestif.

Muscat de Rivesaltes 2010, Domaine Cazes, France fortified, $25.95, SAQ No. 961805: Organic. If you find the sweet wines too sweet, this is a good option. It has lots of exotic fruit, honey with a touch of caramel — with some cooling alcohol refreshes the palate. This can work as an apéritif or with a mixed plate of stronger cheeses. Serve at 10 to 12C. Drink now. Food pairing: Apéritif, stronger cheese.

Rivesaltes 2008, Primage, Château Les Pins, France fortified, $21.75, SAQ No. 871897: At eight years of age, still loaded with fruit. Raisin, figs, Corinthian raisins and a load of spice on the finish. Despite the powerful fruit, a ton of finesse and a silky texture. Serve at 12 to 14C. Drink now. Food pairing: Chocolate, coffee based desserts, digestif.
