“We decided to focus on a core group of menu items, at least for our next new restaurant”, said NGC’s Court Desautels. “The key focus is locally sourced food and it would not make sense to have the same menu available in two Borealis restaurant­s a thousand kilometres apart.” NGC has since opened a second restaurant in Guelph using a different concept, but one that also stays true to NGC’s values. The Miijidaa Café + Bistro (mi-jee-da is an Ojibwa word for “let’s eat” or “come to the table”) features a modern take on the original foods in Canada. “Borealis is our locavore’s hangout; Miijidaa recalls the food Canadians would have eaten in the past,” Desautels said.
