FRENCH HOT CHOCOLATE

If you use the best chocolate, you don’t have to use cream to make this taste amazing.

❚ 1 1/2 cups milk ❚ 2 tbsp sugar ❚ 1/4 tsp kosher salt ❚ 4 oz bitterswee­t chocolate, chopped

1. Place milk, sugar and salt in a medium saucepan and over medium-low heat bring to a simmer.

2. Whisk in chocolate and cook gently, stirring a minute or two.

3. For a frothy version, use an immersion blender for 30 to 60 seconds or transfer to a regular blender. Pour into cups. Yum.

makes 2 to 4 servings
