SAUTÉED BOK CHOY

I use large bok choy for this but baby bok choy is good too — cook it less time. This doesn’t have yuzu but is great with the steak. 1 lb bok choy, sliced in half lengthwise 1 tbsp extra virgin olive oil 2 tbsp soy sauce or tamari 1/2 tsp sugar

1. Heat oil in a heavy skillet. Arrange bok choy in a single layer cut side down. Cook about 3 minutes until starting to brown.

2. Add soy sauce and sprinkle lightly with sugar. Cover and cook 5 minutes.

3. Turn bok choy over, cover and cook a few minutes longer until tender.

makes 2 to 3 servings
