Copenhagen restaurant gets a reboot

Earlier this month, Noma auctioned off its decor, furnishing­s and tableware — all in preparatio­n for its hotly anticipate­d fresh start. Now, chef René Redzepi’s groundbrea­king Copenhagen restaurant has announced that it is taking reservatio­ns for Noma 2.0.

The booking window for the new 40- seat restaurant runs from Feb. 15 to April 29, 2018.

As Noma reports on its website, the menu will be based on three different seasons, “during which the menu will change dramatical­ly to match the type of ingredient­s that are at their peak at any given time of the year.”

Nordic seafood is at its peak in the wintertime, the restaurant says, and its initial February- April menu will highlight a maritime element in each dish.

Seafood season will be fol- lowed by vegetable season ( early summer to early fall), which will showcase plants grown in Noma’s urban garden as well as foraged edibles.

Finally, game and forest season (early fall to January) “is the only period of the year when meat will play a starring role.”

Noma 2.0 will serve dinner and lunch four days a week, with the menu running DKK 2,250 ($ 455) per person, not including drinks. In the same vein as Noma Mexico’s “scholarshi­p fund” earlier this year, 10 per cent of seats will be reserved for students each night. The restaurant will select students at random from a waiting list; the chosen few will pay a special price of DKK 1,000 ($ 200), including wine or juice pairings.
