“The­atre” in Ital­ian, Teatro Ris­torante pays homage to its long­stand­ing lo­ca­tion in Cal­gary’s his­toric the­atre dis­trict. For 25 years, the restau­rant has served el­e­vated Mediter­ranean cui­sine grounded in Ital­ian tra­di­tion. Lo­cal heir­loom car­rots are roasted on a bed of kosher salt and coarsely ground cof­fee beans, steep­ing them in com­plex, savoury flavour. Leek greens are dry roasted and bro­ken down into leek ash. A pinch of the jet black condi­ment com­ple­ments the pas­trami with an ap­peal­ing bit­ter and smoky char­ac­ter. Fraser Val­ley duck breast is brined with star anise, co­rian­der, car­damom, brown sugar and salt be­fore be­ing braised and smoked in house. Lo­cal car­rots are high­lighted once more in an in­dul­gent car­rot brioche made from free-range eggs, fresh milk and car­rot purée. A gar­nish of pick­led car­rots and mus­tard seeds pro­vides re­fresh­ing acid­ity to bal­ance the rich duck meat.
