Definition: Nope, nothing to do with ivory. It’s a culinary movement that started to coalesce a generation ago to stop invasive species from becoming even more

widespread and entrenched. Restaurateurs, particularly in the U. S. south, have added some such items to their menus, including Asian carp, lionfish, Burmese python, wild boar and more.
