LAZA HOT SAUCE
❚ 10 red chilies, deseeded and roughly chopped
❚ 2 shallots, roughly chopped
❚ 1/2 tsp sea salt
❚ 1 tomato, roughly chopped
❚ 4 garlic cloves, peeled
❚ 2 tbsp sesame oil
1. To sterilize the jar, preheat the oven to 140°C (275°F/ gas mark 1). Wash the jar in warm, soapy water, rinse well and place it on a clean baking tray. Transfer to the oven for about 15 minutes and then leave to cool. To sterilize the lid or rubber seal, boil them in a large saucepan for 5 minutes then drain and leave them to air dry on a rack.
2. Using a food processor whizz together the first five ingredients until everything is as fine as possible, then pour in the sesame oil and mix again. Spoon into the cooled, sterilized jar. It'll keep for a couple of weeks in the fridge.
