LAZA HOT SAUCE

❚ 10 red chilies, deseeded and roughly chopped

❚ 2 shallots, roughly chopped

❚ 1/2 tsp sea salt

❚ 1 tomato, roughly chopped

❚ 4 garlic cloves, peeled

❚ 2 tbsp sesame oil

1. To sterilize the jar, preheat the oven to 140°C (275°F/ gas mark 1). Wash the jar in warm, soapy water, rinse well and place it on a clean baking tray. Transfer to the oven for about 15 minutes and then leave to cool. To sterilize the lid or rubber seal, boil them in a large saucepan for 5 minutes then drain and leave them to air dry on a rack.

2. Using a food processor whizz together the first five ingredient­s until everything is as fine as possible, then pour in the sesame oil and mix again. Spoon into the cooled, sterilized jar. It'll keep for a couple of weeks in the fridge.
