February 2, 1867 – Sir Charles E. Saunders, developer of Marquis wheat, was born at London, Ont. In developing the wheat, Saunders used a test in which he chewed the heads of several kernels of the wheat he would cross. The kernels with the greatest elasticity, he believed, would identify heads with the greatest gluten strength. In turn, greater gluten would bake chewy, wellformed loaves of bread. Saunders also spent a decade devoted to the study of music and teaching of voice.
