Honey-Glazed Butternut Squash
Makes: 8 servings 1/4 cup (50 mL) olive oil 2 medium butternut squash, peeled and cut into 3/4-inch (2-cm) cubes (about 6 cups/1.5 L) 1/4 cup (50 mL) honey 1. Heat the oil in a heavy large nonstick skillet over medium heat. Add the squash, cover, and cook until just tender and beginning to colour, stirring occasionally, about 12 minutes. 2. Add the honey and toss until squash is glazed. Season with salt and pepper.
