Honey-Glazed But­ter­nut Squash


Makes: 8 serv­ings 1/4 cup (50 mL) olive oil 2 medium but­ter­nut squash, peeled and cut into 3/4-inch (2-cm) cubes (about 6 cups/1.5 L) 1/4 cup (50 mL) honey 1. Heat the oil in a heavy large non­stick skil­let over medium heat. Add the squash, cover, and cook un­til just ten­der and be­gin­ning to colour, stir­ring oc­ca­sion­ally, about 12 min­utes. 2. Add the honey and toss un­til squash is glazed. Sea­son with salt and pep­per.
