GOLDEN BAKED SOUTHERN-STYLE SPOON BREAD

Serves: 4-6 as a side dish

1 cup (250 mL) cornmeal

1 tsp (5 mL) baking soda

3/4 tsp (4 mL) salt

1 1/2 cups (375 mL) boiling water

1 tbsp (15 mL) butter, melted, plus more for the baking dish

1 cup (250 mL) buttermilk

1 egg, lightly beaten

1. Preheat the oven to 400 F (205 C). Grease a 1-quart (1-L) baking dish.

2. Place the cornmeal, baking soda, and salt in a large bowl and stir in the boiling water.

3. Add the melted butter, then the buttermilk, and stir well to combine.

4. Add the egg, stir well to combine, then pour the mixture into the baking dish.

5. Bake for 30-35 minutes, or until lightly golden on top.
