Cookbook updates classic casseroles

- JULIAN ARMSTRONG julianarmstrong1@gmail.com

Good casserole recipes are always treasured — and you will find 103 of them in the handy little cookbook Family Favorite Casserole Recipes (St. Martin’s Press, $27.99). Author Addie Gundry hails from Minnesota, trained in France and worked for top chefs, and then returned home to the Midwest and a career in recipe development.

She offers classic culinary techniques blended with fresh and ready-made products in the style of many of today’s family cooks. There’s a shepherd’s pie, mac ’n’ cheese, plenty of chicken casseroles (one including kale) and foreign-inspired dishes, as well as such desserts as a chocolate chip pie and a cookie lasagna. It’s down-home cooking with flair, each recipe photographed.

This easy pork recipe from the book needs only a green salad to complete the meal.
