Ar­magnac Baron De Si­gognac 15 Year Old Pro­duced in the Bas-Ar­magnac re­gion. Sweet and spicy on the nose, with notes of cin­na­mon and nut­meg fol­lowed by smooth vanilla and or­ange. Rich and creamy on the palate, with notes of fig, oak, spice, and but­ter­scotch. Fin­ishes beau­ti­fully with spice and marzi­pan. LCBO276534/$150 Charles De Granville Cal­va­dos 25 Year Old El­e­gant honey colour with su­perb ma­hogany re­flec­tions. Su­perb nose, with aro­mas of ap­ple com­pote with vanilla sticks and frag­ments of plums. The palate re­veals aro­mas of tarte tatin, cin­na­mon, and licorice. The fin­ish is mag­nif­i­cent, mix­ing apri­cots and dry fig flavours. LCBO 276708/ $302.70 2016 Do­maine de Tara Terre d’Ocres Blanc Lu­mi­nous pale straw-yel­low colour with bril­liant high­lights. Very re­fined bou­quet, with aro­mas of cit­rus fruit (or­ange and man­darin), white flow­ers, and seed fruits with a dis­creet min­eral touch at the fin­ish. Sub­tle and re­fresh­ing, with a fine bal­ance be­tween fruit and acid­ity and lin­ger­ing hints of lime tree. Pairs well with seafood, poul­try, fish dishes, soft fresh cheese, and Asian cui­sine. It also makes a fine aperitif. LCBO 380732/ $22.70 2016 Roger Sabon Rhone Blend A brick-red colour with pure aro­mas of rasp­ber­ries, ripe cher­ries, smoked meat, Provençal spices, and min­er­als. It is well bal­anced, with silky tan­nins and lots of red and black fruit flavours. Medium- to full-bod­ied, it will pair per­fectly with grilled meats, bar­be­cues, and char­cu­terie. It is ready to drink now and will hold beau­ti­fully for an­other four to five years. LCBO 379379/ $20.45
