Waxwing Gin

It’s a gin and tonic with a devil-may-care attitude. The first spirit produced by Gatineau’s Artist in Residence distillery, Waxwing Bohemian Gin is inspired by a pretty Canadian bird, one that is known to partake of the juniper berries that provide the essence of gin. If the berries happen to be fermenting when the waxwings touch down, they’ve been known to get a little drunk, flying off course and ending up in unexpected places. Tasting notes describe this new gin as exhibiting limpid orange from a maceration of rosehip berries and plant extracts. Seasoned sippers will also be able to discern fresh juniper, lemon peel, and coriander on the nose. Recipe 1∏ oz. Waxwing gin 3 oz. tonic water 1 lime wedge
