THE LAST SERVICE

- WORDS BY ZACHARY RESNICK PHOTOGRAPHY BY SARAH FARMER

The last sip of wine, the last bite of a shared dessert, the last chit printed in the back.

The restaurant business has always been physically and mentally demanding, but now it feels as if each day could be the last.

The current climate brings new tolls, but many issues plaguing restaurants have been kept under wraps for a long time. By creating scenes that depict the day-to-day struggles, we are able to glimpse the challenges — and gain new respect for what it takes to be a chef and support them before it’s truly their last service.
