BEEF TENDERLOIN WITH ROASTED GARLIC SAUCE

Serves: 6-8

▪ 1/4 cup (60 ml) balsamic vinegar

▪ 1/4 cup (60 ml) olive oil

▪ 2 tbsp (30 ml) chopped green onion

▪ 1 tbsp (15 ml) chopped fresh rosemary

▪ 1/2 tsp (2.5 ml) freshly ground pepper

▪ 2 lb (1 kg) beef tenderloin roast

▪ Roasted garlic sauce (recipe follows)

1. Combine first 5 ingredient­s in a large heavy zip-locking plastic bag. Add tenderloin and squeeze bag to coat tenderloin with marinade; seal bag and place on a plate. Refrigerat­e, turning bag occasional­ly, for 8 hours or overnight. Remove tenderloin from marinade and pat dry; discard marinade.

2. Grill tenderloin over medium heat on natural gas barbecue, turning occasional­ly, to desired doneness. Let stand 5 minutes before carving. Serve with garlic sauce.
