WATER­MELON, FETA AND BLACK OLIVE SALAD

Serves: 8

1 small red onion, thinly sliced 3-4 limes

3 pounds of ripe water­melon, cubed

8 oz feta cheese

1 bunch fresh Ital­ian pars­ley, torn

1 bunch fresh mint, chopped 1/4 cup ex­tra vir­gin olive oil 2/3 cup pit­ted black olives salt and black pep­per

1. In a medium bowl, com­bine the slices of red onion and juice of two limes. Let them min­gle for about 10 min­utes while you chop the water­melon.

2. Cut the feta in sim­i­lar size to the water­melon. Place them both on a large, shal­low bowl or plat­ter. Add in the torn pars­ley and chopped mint.

3. Pour in the red onions and all the juices. Driz­zle with the olive oil and add the olives. Very gen­tly mix the salad with your hands. Add a sprin­kle of salt and give a good grind­ing of black pep­per.

4. Taste and add more lime, if you like. Serve right away. Left­overs don’t keep well.
