WATERMELON, FETA AND BLACK OLIVE SALAD
1 small red onion, thinly sliced 3-4 limes
3 pounds of ripe watermelon, cubed
8 oz feta cheese
1 bunch fresh Italian parsley, torn
1 bunch fresh mint, chopped 1/4 cup extra virgin olive oil 2/3 cup pitted black olives salt and black pepper
1. In a medium bowl, combine the slices of red onion and juice of two limes. Let them mingle for about 10 minutes while you chop the watermelon.
2. Cut the feta in similar size to the watermelon. Place them both on a large, shallow bowl or platter. Add in the torn parsley and chopped mint.
3. Pour in the red onions and all the juices. Drizzle with the olive oil and add the olives. Very gently mix the salad with your hands. Add a sprinkle of salt and give a good grinding of black pepper.
4. Taste and add more lime, if you like. Serve right away. Leftovers don’t keep well.
