Whether for health, the environmen­t or other personal reasons, many people find themselves shifting toward a more plantbased eating pattern.

The good news is you don’t need to be completely vegetarian or vegan to make a positive impact. And plant-based eating doesn’t mean “rabbit food.” With the right ingredient­s and cooking methods, meatless dishes can be just as delicious and hearty as their meaty counterpar­ts.

Colourful and chock-full of ingredient­s, our crowd-pleasing vegetarian chili won’t have anyone missing the meat.

This comforting classic is delicious topped with shredded cheese and served with some crusty bread or cornbread to scoop up every last drop.

Feeding a group of chili heads? Try adding a pinch of cayenne, hot sauce or some sliced jalapeno for some extra heat.

Saffron doesn’t come cheap, but it’s worth every penny in our mushroom risotto, lending its vibrant colour and subtle perfume.

This recipe takes classic risotto and adds dried porcini mushrooms for rich umami flavour, and brandy and honey for a hint of sweetness.

For extra mushroom flavour, rinse the porcini mushrooms prior to soaking them, so you can add the soaking water into the broth.
