ROASTED GARLIC SAUCE

■ 2 heads roasted garlic

■ 2 tbsp (30 ml) butter

■ 2 tbsp (30 ml) flour

■ 1/4 cup (60 ml) dry white wine

■ 1 cup (250 ml) whipping cream

■ 1/3 cup (80 ml) grated Parmesan cheese

■ 1/4 tsp (1 ml) salt

■ 1/4 tsp (1 ml) freshly ground pepper

■ Dash nutmeg

1. Squeeze pulp from roasted garlic. On a side burner of natural gas barbecue or directly on grid, melt butter.

2. Stir in garlic pulp and flour and cook, stirring, for 1 minute. Stir in wine. Cook until slightly thickened.

Stir in cream and cook until thickened. Add remaining ingredient­s and cook until cheese is melted.
