“I love this dish because it’s so out of the norm. As a cook, I’m still discoverin­g what my ‘brand’ is and how I can showcase it in a unique way. I am absolutely in love with Italian/Tuscan cuisine, and finding innovative ways to incorporat­e Indigenous fusion into it excites me. I’m a big believer in supporting local—I just find it so powerful going out onto the land and foraging for your own ingredient­s. It really humbles you. It gives you a deeper appreciati­on for what you’re working with and a greater story to tell. However, like with all recipes, I encourage people to find what works best for them when making it at home. Each palate is different, and I’m just here to set a guideline to help others discover their own creative twists the same way I’m doing myself. Buon appetito!”
