Welsh rarebit bites
Authentic cave-aged farmhouse Cheddar stars in this updated take on the Welsh rarebit, an English dish of toasted bread topped with a savoury cheese sauce. It’s traditionally served as a main course, or for high tea, but we’ve transformed it into a festive finger food by using three-bite baguette rounds. The result is a tangy, rich taste and a comforting culinary experience in appetizer form.
INGREDIENTS
• 1 pkg (200 g) PC® Black Label West Country Farmhouse Cheddar Cheese
• 1/4 cup (60 ml) sour cream
• 1 tsp (5 ml) each Dijon mustard and Worcestershire sauce
• 1 baguette, trimmed and sliced diagonally into 1/2-inch (1 cm) thick rounds
• 3/4 cup (188 ml) PC® Black Label Bacon Marmalade Spread
• 2 tbsp (30 ml) chopped fresh chives or thyme
DIRECTIONS
1. Arrange rack in top third of oven. Preheat broiler.
2. Stir together cheese, sour cream, mustard and Worcestershire sauce in bowl until combined. Set aside.
3. Arrange baguette slices on 2 foillined baking sheets. Broil, turning baguette and rotating trays halfway through, until toasted, 4 to 6 minutes.
4. Spread 1 tsp marmalade onto each baguette slice. Top each with heaping 1 tsp cheese mixture, pressing to flatten.
5. Broil, rotating trays halfway through, until golden and bubbling, 3 to 4 minutes.
6. Transfer to serving platter. Garnish with chives. Serve immediately.
Chef’s Tip: The baguette slices can be toasted ahead of time to get this appetizer out to guests more quickly. Let cool completely and store in an airtight container for up to 24 hours, then top with marmalade and cheese mixture and broil as directed before serving.
