RASPBERRY CHIA JAM
Sweetened with maple syrup and the natural sugars in the fruit, this easy jam is bursting with raspberry flavour. Fibrerich chia seed helps thicken it, as does the pectin in the berries.

3 cups (750 ml) raspberries (or blackberries) 1 tbsp (15 ml) fresh lemon juice
2 tbsp (30 ml) Pure maple syrup
3 tbsp (45 ml) Black chia seed
1.Stir together berries and lemon juice in small saucepan over medium heat; bring to a simmer. Mash lightly with back of fork or potato masher leaving some berries intact for texture. Reduce heat to low; simmer until berries soften — about five minutes.
2.Stir in maple syrup and chia seed; remove from heat. Let cool 10 to 15 minutes. Pour into glass jar or other airtight container; store in refrigerator up to two weeks.
