WALDORF SALAD

cups mesclun greens cups baby spinach
Honeycrisp apple, diced
Bartlett pear, diced cup crumbled Danish blue cheese cup toasted walnuts tbsp dried cranberries tbsp Crispy Fried Shallots tsp minced rosemary cup Classic Balsamic Dressing (page 95)
Combine all of the ingredients in a large stainless-steel bowl. Top with the dressing and, using tongs, toss until well-mixed and dressed.
